Stages of Freezing and Defrosting

  1. Baking.
  2. Cooling of the finished product.
  3. Packaging.
  4. Freezing at a temperature not higher than -18°C until the internal temperature of the product reaches (-10±3)°C.
  5. Storage at a temperature not higher than -18°C for no more than 180 days.
  6. Defrosting: pies are defrosted at a temperature from +18°C to +20°C for 4–5 hours.
  7. Repeated freezing and further defrosting are prohibited.
  8. Storage conditions and shelf life after defrosting (within the overall storage period): at a temperature from +4°C to +8°C and relative air humidity not exceeding 75%: pies – no more than 48 hours.
  9. Recommended to heat before consumption.
